When you use a Block Ice Shaver, insuring an adequate inventory of blocks to shave can be difficult, especially during periods of high sales. Picking or sawing 50 lb. ice chunks into smaller blocks can be costly and time consuming, so production of round ice blocks is a great - and a very inexpensive - way to keep your cost per serving down. It is very important an adequate inventory of blocks made up in advance. When you are out of blocks, you may be out of business! Keep a few dozen molds "working" at all times - then pack your blocks in poly bags and repeat the freezing process.
